Seven New Pours Worth Pulling Up a Stool For
We rotated the board this week, and it's a good one — some classics done right, some collaborations we're genuinely proud to pour, and a couple of beers that don't come around often. Here's what's new at The Birch.
The Pilsners
Palmovka Speciální (Czech-Style Pilsner, 5.5% ABV, Schilling Beer Co. — Littleton, NH) is a limited edition tribute to Plzeň, brewed with heirloom yeast, floor-malted Czech Pilsner malt, and whole leaf Saaz hops. Fresh baked bread and floral hops up front, soft and crisp all the way down. Na zdraví.
Pils (German-Style Pils, 4.6% ABV, Dovetail Brewery — Chicago, IL) — say it with us, "P-I-L-S," not Pilsner. Inspired by Franconia: bitter without being bracing, hoppy in good measure, smooth and snappy. Note: different from Dovetail's Czech-style "Dovetail Pilsner" — don't mix them up at the bar.
The IPAs
Lunchbox (New England IPA, 6.6% ABV, Alternate Ending Beer Co. & Kane Brewing — Aberdeen, NJ) is a Jersey-through-and-through collab, named for Kevin Smith's Jay & Silent Bob universe. Mike Kane shared a hand-selected Citra lot, paired with Alternate Ending's own and a touch of Rabbit Hill wheat, for a hazy IPA of bright citrus, tropical fruit, and a soft, pillowy body.
Tessellate (West Coast IPA, 6.4% ABV, Dancing Gnome — Pittsburgh, PA) is all about Mosaic hops — explosive notes of bright berry, sweet citrus, and dank peach.
Birch Classics
Hitachino Nest White Ale (Witbier, 5.5% ABV, Kiuchi Brewery — Naka-shi, Ibaraki, Japan) is a refreshing, mildly hopped Belgian-style ale with coriander, orange peel, and nutmeg — a longtime favorite for good reason.
Tripel (Belgian Tripel, 9% ABV, Allagash Brewing Company — Portland, ME) just took gold at the 2025 Great American Beer Festival. Herbal and passion fruit on the nose, honey and biscuit on the palate, with a finish that stays dry despite the strength.
Exilis (Berliner Weisse, 3.8% ABV, OEC Brewing — Oxford, CT) is for the beer geeks: a traditional three-part decoction, left unboiled overnight in the coolship before fermenting — tart, low-ABV, and great for resetting your palate. Available in 4.5oz pours.
