There's a particular kind of excitement that comes with a delivery day at The Birch — the moment we unwrap a new wheel, cut into it, and take that first bite, its always a good day!

Three New Cheeses Worth Getting Excited About

Alisios is our new favorite conversation starter. A cow and goat's milk blend from Spain, it's tangy and smooth with a warm hit of paprika running through it — the kind of cheese that tastes like it belongs on a sun-drenched terrace with a glass of something cold.

Barbers 1833 brings us back to basics, in the best way. This English cow's milk cheddar is sharp, bright, and made using a method the Barber family has been perfecting since — you guessed it — 1833. It's the kind of cheddar that reminds you why cheddar became a classic in the first place: no gimmicks, just a clean, confident bite.

Moody Blue rounds things out for anyone who leans toward the bold. A Wisconsin cow's milk blue, it's smokey and creamy with just enough funk to keep things interesting. It's a blue for people who think they don't like blue cheese.

On Tap Now: Floored Manseng

Behind the bar, we've got something rare pouring right now. Floored Manseng is a wild ale born from a collaboration between three names we deeply respect: The Veil Brewing, Pen Druid Brewing, and Sumac Kitchen. It's brewed using traditional spontaneous fermentation, built around petit manseng grapes and wild-harvested sumac berries.

The result is complex in the way only spontaneous fermentation can deliver — layered, a little unpredictable, and completely of the moment it was brewed in. This one's limited, and once it's gone, it's gone. No promises on a next batch.

Malia is a lover of all fine food, beverage, and hospitality. She opened The Birch in January of 2011. She also owns Four Eleven York, a boutique inn and restaurant with her husband and has served on many community associations, including founding the Chelsea Business Association.
